I think it might also be transferred plate, I think these are different chassis numbers... Anyone good with F1 chassis numbers??

I think you're right. There is an air intake missing from the front of this one, which wouldn't be easy to change

Can anyone answer this to me, because I never figured this out - so all the different racing variants, like the GTRs and LMs , are they part of the original F1 run of 66 cars?

The road cars were built for the road from the factory. The race cars were built in addition (some of which have later been converted to road use).
Including the prototypes there were in total 106 McLaren F1's built and according to Wikipedia the build numbers are as follows:
5 prototypes (XP1, XP2, XP3, XP4, XP5)
64 road versions (F1)
1 tuned developmental prototype (XP1 LM)
5 tuned versions (LM)
1 longtail developmental prototype (XPGT)
2 longtail versions (GT)
28 racecars (GTR)

Yes, this is a transfer from chassis 19R (GTR LT prototype) to GTR chassis 04R

There are multiple differences I can see including the air intake missing, the front splitter is longer and thinner, the grilles are different shapes, the louvres over the wheel arches are missing and the roof scoop (I believe part of the chassis but may be wrong) is much smaller.

A little time on google suggests that car 61 had a normal normal plate when it was mis-fuelled with diesel! So my conclusion is that this is definitely a different car with the plate transferred.
