Cool find! It's actually Number 578 as in the canton of Fribourg the series for privat persons starts at 10000. Number below that are reserved for Public/private transport companies aswell as taxis
Here's a URL to what the swiss plates may look like in the future: https://www.kontrollschild-schweiz.ch/zukunft.aspx As in 1.5y Zurich will reach as the first canton the 1 Million mark smaller numbers will be needed or any other change to fit 7 digits.

Nice, I wouldn't have realised that. I don't even think the owner is Swiss either going by the English flag by the plate

Some years ago we were discussing here about the possibility of creation of new letters for some Swiss cantons where the numbers would reach its limit. I guess it's not an option anymore? The new (possible) format doesn't really look nice (to me). It is too German. If they keep with it the charm of Swiss plates would be gone..
To be precise the CH sticker is not related to their non-membership of the EU but to UN conventions (Geneva Convention on Road Traffic of 1949 and Vienna Convention on Road Traffic of 1968). Both conventions require the presence of a "distinguishing sign of the State of registration" on plates. As Switzerland signed these conventions and its plates do not meet the requirements of convention, a CH sticker is mandatory for vehicles with Swiss plates going abroad. Most EU member states have harmonised their plates to a Euro-style which include the country code but there is no regulation, also many non-EU countries use the Euro-style (Ukraine, Turkey, Georgia. Israel, etc).
The move to 7 digits in Zurich by 2028 may be an opportunity for Switzerland to review its registration system to include CH on plates themselves and dispense with the stickers. This reminds me that someone thought it was a good idea to switch to 7 digits in VS last year https://www.lenouvelliste.ch/valais/bas-valais/martigny-district/une-fausse-plaque-valaisanne-a-7-chiffres-decouverte-a-martigny-1063859
