The last 10 years we went on holiday there were always 'Baustellen' during the summerholidays in Germany (Route Meppen-München). Some of them I've seen 4 years in a row, and they're still not finished...

The last time I drove the A3 Nürnberg - Frankfurt was in 2010 when I spent my holidays in Moravian-Silesian Region, CZ and this particular one was already there 
When I'm in Bavaria I normally take the A6 whehere there is lesser traffic and Baustellen maybe you should try that also next time
